Ingredients

1½ pounds beef stew meat, cut into 1-inch pieces

4 carrots, peeled and chopped

3 medium potatoes, peeled and cubed

2 celery stalks, chopped

1 small onion, chopped (optional for lower odor)

3 cups low-sodium beef broth

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon pepper

2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)
Instructions

Add all ingredients except cornstarch and water to the slow cooker. Stir gently.

Cover and cook on low for 8 hours or high for 6 hours, until meat and vegetables are tender.

Optional: Mix cornstarch and water in a small bowl. Stir into stew to thicken. Let cook uncovered for 15 minutes.

Serve warm with bread or over rice.
