Ingredients

  • 1½ pounds boneless, skinless chicken breasts

  • 1 can (15 oz) white beans, drained and rinsed

  • 1 can (4 oz) mild green chiles

  • 1½ cups low-sodium chicken broth

  • ½ teaspoon garlic powder

  • 1 teaspoon cumin

  • Salt and pepper to taste

  • 4 oz cream cheese (half a block), cubed

  • Optional: corn, diced onion, fresh cilantro for garnish

Instructions

  1. Place chicken, beans, green chiles, broth, garlic powder, cumin, salt and pepper in the slow cooker.

  2. Cover and cook on low for 6 hours or high for 4 hours.

  3. Remove chicken, shred with two forks and return to pot.

  4. Stir in cream cheese until melted and creamy. Let sit 10 minutes.

  5. Serve warm with tortilla chips or crusty bread.
